In today’s market, there are plenty of options to choose from in the grocery store. Whether you want a plant-based burger, turkey burger, or the classic beef burger, the choices are endless. But what if I told you that you could make your own burger patties at home with no fuss and no compromise on flavor?
This chicken burger recipe has quickly become one of my favorite summer dinner go-to’s. Now, I know you may be thinking that chicken recipes tend to be dry, but believe me when I say these burgers are juicy and utterly delicious, especially with the herbs and spices in each bite.
With summer in full swing, light and refreshing meals are staples as they don’t feel heavy in the stomach but provide the sustainable energy you need. Just picture eating a light and tender chicken burger with loads of herbs and spices, topped with tangy tzatziki, and freshly sliced veggies. No grill is necessary in making these, but they can easily be thrown on the grill and made for a crowd!

This chicken burger encompasses these principles, of integrating flavor with nutritious ingredients for a well-balanced meal. The Mediterranean diet emphasizes fresh, whole foods, including lean proteins, a variety of whole grains and vegetables, healthy fats, and of course, plenty of herbs and spices.
Chicken: As a lean and high-quality protein option, chicken is a fantastic choice for limiting red meat consumption. Chicken is extremely versatile and takes on a variety of flavor profiles making it the ultimate canvas. Protein is an essential macronutrient for building and repairing tissues in the body and transporting nutrients throughout. Chicken also provides vitamins and minerals such as the B vitamin complex, selenium, and vitamin A.

How to Make: Ingredients and Steps
Ingredients -
Ground Chicken Breast: The base of the patty. Chicken thighs can also be used. Another lean protein such as turkey can be substituted as well.
Cottage Cheese: This keeps the chicken from drying out while cooking by adding additional moisture to the patty.
Feta: Adds tang and a slight briny-ness to the burger. Feta also maintains its integrity as the chicken cooks.
Fresh Parsley: I recommend using fresh as this will yield a brighter flavor but dried can be substituted if you don’t have any on hand.

Garlic: Adds more depth of flavor and boldness. Fresh garlic offers more flavor and ‘potency,’ however, ground garlic can be used as a substitute
Salt and Pepper: To taste.
Steps - Making the Chicken Burger Patty
1. Grind the chicken breast. If you already have ground chicken move to step 2. Slice the chicken breasts into approximately 2”x2” chunks and place them into a food processor or high-speed blender. Pulse for 5-second intervals until the chicken breasts resemble ground pieces. Be careful not to over-blend as this will yield a mushy and watery patty.
2. Combine the ground chicken, cottage cheese, feta, chopped parsley and oregano, minced garlic, salt, and pepper in a large mixing bowl. Using a spatula, gently fold the mixture to combine all the ingredients.
3. Divide the ground chicken mixture into 2 to 4 parts. Gently shape each into a disc shape following the bun size.
Steps: Burger Assembly
Cook the chicken patties. These taste great on the grill or a preheated cast-iron skillet.
Prepare the buns, condiments, and toppings.
Lightly toast the buns
Tangy and creamy tzatziki sauce
Thinly slice cucumber, sweet peppers, red onions, tomatoes, and/or lettuce
Serve alongside a light and refreshing cucumber and tomato salad!
