A delicious and easy Mediterranean take on the cabbage slaw! Full of fresh and vibrant flavor and colors, this recipe will not disappoint in accompanying your next summer meal!

Made with just a handful of simple ingredients, this slaw is healthful and so versatile to pair with a wide array of dishes. Perfect for weeknight dinners and summer meals on the patio or at your next gathering!

I love to serve this Mediterranean slaw in a lightly grilled soft flour tortilla with lemon chicken, on a turkey burger (or even on the side!), or as a side dish to seafood and chicken dishes - the options are endless!

Mediterranean Slaw Health Benefits:

Green Cabbage: Chocked full of vitamins, minerals, and antioxidants despite being low in calories relatively speaking. Green cabbage is a great source of fiber, Vitamin C, and Vitamin K.

Red onion: Would you be surprised if I told you that red onions have a great nutrient profile and boast medicinal properties? I know I was. Red onions offer vitamins and minerals such as Potassium, Vitamin C, and B-complex vitamins. Research even suggests that red onions offer antioxidants and anti-inflammatory properties that help with overall heart health and blood pressure.

Sweet Bell Pepper: Another great source of vitamins and minerals including Potassium, Folate, and Vitamins: A, B6, C, E, K1. Antioxidants are also highly prevalent, namely carotenoids found in red, orange, and yellow foods.

How to Make: Ingredients and Steps

Ingredients -

Green Cabbage: I opt for just green cabbage in this slaw, but you can substitute red cabbage. A 50/50 ratio can also be used adding more color and flavor.

Red Onion: Add a slight kick and a sharp flavor to each bite. I recommend slicing the red onion thinly.

Sweet Bell Pepper: Offers a slightly sweet flavor in the slaw. Mini sweet peppers or slices from red, orange, or yellow bell pepper.

Capers: Salty, briny, with a slight acidity, Capers are a staple ingredient in Mediterranean cuisine.

Fresh Oregano: Or any fresh herb you like to add freshness! Dill and mint would be great substitutes.

Salt and Pepper: To taste

Feta (optional): Crumble on top to add a hint of tang.

Kalamata Olives (optional): Pit before tossing in the slaw.

Steps -

1. Prep the vegetables: Thinly slice the green cabbage and red onion using a mandolin or knife. Julienne (cut long, thin slices) the sweet pepper(s).

2. Place the green cabbage, red onion, and sweet pepper into a medium-sized mixing bowl, and toss/mix to combine.

3. Finely chop the oregano and strain the capers from the jar. Add to the bowl with salt and pepper, tossing to combine all ingredients. If you are adding feta and olives, add at this step to keep feta in the desired crumble size and texture.

4. Serve immediately with your choice of dressing or place in an airtight container to serve later. Enjoy!
