Embrace the light and vibrant essence of the summer with this mocktail in hand!

Every year the scorching heat appears far earlier than I recall the prior season. I cannot believe that we’re still in June, yet temperatures on the East Coast are soaring in the mid to high 90s!

I find myself reminiscing about my upbringing living in California, where we were blessed with beautiful weather that presided in the 70s and beach outings were a regular occurrence. Now residing on the East Coast, the humidity and at times, muggy days pose a unique challenge to get accustomed to. Refreshing beverages become paramount when you want something just a tad more exciting than water in your tumbler.

While Fall is my favorite season and all the memories, festivities, and traditions that come with it, summer is brimming with new experiences, gatherings, and outdoor activities. Let go of those hot beverages for seasonal and light refreshments. With that in mind…

Add this lemon, cucumber, and mint mocktail to your drink rotation blending citrus and refreshing cucumber, with herbaceous and fragrant flavor from the mint. Whether you’re looking to take a break from alcoholic drinks, cannot consume alcohol, serving a diverse crowd, or simply crave something light, this is your next go-to favorite.

How to Make: Ingredients and Steps

Ingredients -

Lemon: Fresh lemon juice is best for its vibrant and zesty flavor but also to add the lemon slices to further infuse the lemon-y flavor.

Cucumber: Fresh cucumber. Regular cucumbers are best to use rather than mini, save those for another recipe!

Mint Leaves: Fresh not dried.

Ginger Beer: If you don’t have ginger beer on hand or don’t like the flavor, you can easily swap for sparkling water or club soda for a neutral base.

Ice Cubes:

Steps -

1. Add the mint leaves to a pitcher and gently mash with a spoon, allowing for the flavor to better infuse when other ingredients are added.

2. Thinly slice 1 of the lemons and the cucumber and add to the pitcher with the mint. Slice the remaining lemon in half and squeeze half into the pitcher. Next, add ice cubes to the pitcher.

3. Top the pitcher with ginger beer and gently stir to combine.

4. Pour your mocktail into serving glasses, garnish with a mint leaf, and enjoy!
